Estate-grown grapes from the chalk-based hills of Dorset. 70% Pinot Noir (cold macerated for 48 hours to extract colour and then very slowly pressed), 30% Chardonnay. The first vintage made with Steven Spurrier. Medium-pale pink and surely, surely, the Nutcracker Suite of strawberries… If strawberries had wings and inhabited Middle Earth and filled the sky at dawn with a susurrant chorus of silvery diaphanous song, whirling on point across luminous-green moss-clad rocks, peeling pink apple skins from pebbles, laying lime-sherbet land mines and dive-bombing dragonflies, and if you could turn this into liquid, you`d feel some of the empyrean magic of this wine. It has a child-like, playful, modest charm on the surface, but behind that lies something so much more. (TC)
