The peculiar type of reduction that the Burgundians call bourgeon de cassis (cassis blossom) currently dominates the nose. There is more size, weight and richness if not the same refinement to the more substantially constituted flavors that display an overt power and muscle on the very firmly structured and impressively persistent finish. Much like the Lavaut St. Jacques, this is decidedly old school in style and plenty of patience will be necessary.
